Vanilla beans – does size really matter?

In vanilla beans the flavour is found not in the skin or the seeds but in the black pulp in which the seeds are embedded. The fleshier and softer the beans, the more pulp they contain and the easier it is to remove it.
The argument that bigger beans are better than small beans is true in so far that they contain more pulp than smaller beans and that the proportion of tannin-rich skin is lower.
